I've found that steaming chicken breast makes it really tender and quite appealing because it doesn't dry out. I make aluminum foil packages and fill them with flavoring and then put the chicken breast on top and bake for 25 minutes. This is something to think ahead for days. I've tried other variations, you could do an Italian one, for example, but this one is my favorite.

I made this last night and thought it was pretty tasty. I used panko instead of bread crumbs.
